I have been checking on the batch of wine that I made on Sunday throughout the day today.  When I first checked on it yesterday a couple of hours after I put the lid on it there was no activity whatsoever in the airlock.  There should have been bubbling going on.  And it wasn’t.  I was hoping that I wasn’t going to have to put more yeast in.  But then it started bubbling.  This bubbling I am talking about is actually gas being released through the airlock.  It is the sign of a healthy fermentation.

And there is satisfaction in that.  Knowing that I am able to mix these ingredients up, and get them doing what they are supposed to do.  That on the back side I am going to potentially have 4 gallons of a good wine.  I say potentially because this is like any recipe.  There will be things that I will want to add, and possibly things I will want to delete.  Will just have to wait and see when it is done with its fermentation.

But you should be home brewing.  Yes, you.  There is a satisfaction in making things on your own.  Those of you who are bakers know this.  You mechanics know what this feels like.  A sense of accomplishment, and that satisfaction.  Homebrewing is easy.  And you should be doing it.
