Let me start this off by saying, right up front, I am not a Master Brewer. I have taken no classes on brewing. Everything I do, I have learned either from YouTube, or someone has taught me.
There. With that out of the way, lets get on with it.
The cider that I put into the fermenter two weeks ago is ready to bottle. My plan is to move two gallons of it into smaller plastic bottles, place them in the freezer, and then eliminate the water. Doing this concentrates the alcohol and turns it into an apple liquor commonly known as apple jack. The rest, after fermenting, has turned into a hard cider with an ABV of around 10-12%.
The process to convert that cider to apple jack will take about a week.
